Know the types of wood

Not all wood chips are suitable for smoking. However, there is a myriad of them that you can choose from to infuse different flavors in your food. The key here is to experiment with various types of wood chips until you find the flavor that you like most. Here are some of the common types of wood and the types of food they can be used to smoke.

  • Oak and maple: Have a sweet, rich flavor that's suitable for vegetables, poultry, and pork.
  • Mesquite: Has a mild-bold, spicy flavor. It is suitable for grilling vegetables, beef, and pork.
  • Cherry, apple, and peach: These woods are ideal for fish, poultry, ham, and other delicate meats.
  • Pecan: suitable for ribs, chicken, and fish.

Other ideal types of wood include black nut, apricot, almond, avocado, bay, ash, and cottonwood. When starting out, use a handful of chips and add more as you feel your way to the desired flavor. You can also mix and blend different types of wood chips to experiment or create your flavors.

Soak the wood

To soak or not to soak? This is a question that lingers in the minds of many people who wish to start smoking their grilled foods. Now, the concept behind smoking foods is allowing the wood chips to produce smoke and infuse flavors into the food without burning out fast. Though it is not compulsory for you to soak the wood, it is highly recommended. You can also soak half the wood chips and leave the others dry.  You can soak the wood in water for a few minutes, an hour, or even a whole day, whichever is convenient for you.

Smoke the wood chips

It is essential to smoke the wood chips before you start grilling to ensure that your first batch of food on the grill gets the smoky flavor. You can spread the wood chips on coal, wrap them in foil with small holes for the smoke to escape, or use the smoker box that comes with some types of gas grills. Once the wood starts smoking, you can start grilling.
